I use 2 sails. One I only go front or back. The other I use to go sideways. If one is facing front and one facing right you go full sail speed front and full speed right. Also if passing up an island you can face one sail back to stop forward momentum and then use your other sail to maneuver towards the island without passing it.
But if you have a huge raft, and don't feel like running all the way back to a sail, you to can kind of operate this from different points. However you'd have to raise or turn the other sails if you have more than one open. I'm pretty sure that might change at some point, but right now it doesn't help having more than one.

As Random said, sails do not stack, one sail is all you need. If you're using engines you need one engine per one hundred foundation pieces nets don't count. If you use one more engine than you need you will get some extra speed, but it doesn't increase beyond that.
